You may be thinking, "Surely there can't be a recipe for this?". Because all you have to do is buy a chicken, bung it in the oven, peel off the skin and eat it, job done.
But you'd be wrong (slightly).
We've found that not all of the skin from a chicken is 'just right' for chicken crackling.
The name is really not important. Sufficed to say, this is not just chicken skin pulled off the bird you just happen to have roasted. Chicken Scratchings seems like a term for the snack in a little bag, eaten cold. Chicken Crackling seems more like the overall term for all types of chicken skin based snacks, eaten warm. This is recipe is somewhere in between. We are making the snack, to eat by itself, you may eat it warm, you may eat it cold.
Keeping clean is a no brainer, but now in 2020 it's been put into sharp focus. Don't forget to wear an apron. Cooking chicken crackling can be a little bit dirty and greasy, so get a nice apron here.
