The Review
There is no smell to this crackling. Well, there’s no smell for me, because I caught covid 5 months ago and still can’t smell anything. So, I have to leave a 5/10 for the smell. This will improve if anyone can tell me different!
The pieces are very thin and square, like bent stamps with a layer of glue underneath. They are not long and thin like most scratchings.
They taste very homemade, similar to the ones I make myself. They have a lovely seasoning that looks like salt and black pepper. They are not too salty.
They are fairly dense and oily/fatty, and not like crackling you normally buy from the shops. There must be some way (maybe the double-cooked method) that gets the fat to leave the layer of fat, leaving the crackling lighter and less oily. The Secret Sausage Shop and I do not know how to do this.
They are very crisp and fresh. They are not had to bite into and there are no teeth breakers. The layer of fat under the skin is also very thin, but there’s enough there to give the crackling some added flavour.
There’s one piece with the longest single hair I have ever seen on a scratching. Amazing!
At the bottom, there are a fair amount of small flakey bits of fat, no skin or salt at the bottom of the jar.
Towards the end of the jar, I’m finding a bit hard going as the fattiness of the crackling is getting too much for a one jar single sitting affair. So, I suggest eating the jar over a couple of sittings, or if you dare… find someone to share them with!
